No Beef bolognese

Our No Beef bolognese is a plant-based bolognese that we have made with No Beef plant strips 🍝🌿 Our plant-based bolognese is a tasty alternative for the meat-free days, and it is even very easy to make. 

 
We have topped our version with Umami Topping, which can be used as an alternative to parmesan and the other lovely cheeses that you would usually put on bolognese.

Ingredients

 

1 aubergine
4 tbsp olive oil
Salt and pepper
3 shallots, minced
2-4 cloves garlic, minced
350 g DAVA No Beef, prepared
1 courgette, cut into small cubes
1 red pepper, cubed
A handful fresh basil, roughly chopped
2 dl red wine
3 tbsp tomato concentrate
1 can chopped tomatoes
1 tsp paprika
Fresh spaghetti according to your preference
4-8 tbsp DAVA Umami Topping

Instructions

Set the oven to 200 °C.
 
Cut the aubergine in half, and brush the two halves with some of the olive oil. Sprinkle with salt and pepper. Bake them golden in the oven for approx. 25 minutes.
 
Sauté shallots and garlic along with the rest of the oil in a pot for a few minutes.
 
Add DAVA No Beef, and mix with the onions.
 
Add the vegetables, followed by red wine, tomato concentrate, chopped tomatoes and paprika. Add water, until it covers the bolognese.
 
Season with salt and pepper. Leave the bolognese to simmer over low heat for approx. 15 minutes. In the meantime, boil the spaghetti following the instructions on the package.
 
Cut the baked aubergine into bite-size cubes, and mix them gently into the bolognese right before serving.
 
Serve the bolognese on top of the freshly boiled spaghetti. Top with Umami Topping.
