Tomato and curry soup
Servings: 2 persons
It's soup season all year round with this delicious tomato soup.
You need
5 tomatoes
230 g DAVA whitePRO egg whites
0.5 onion
0.5 bunch of basil
0.5 carrot
0.5 red pepper
A little olive oil for frying
1 bay leaf
5 dl water
1 tsp curry
How to
Cut the tomatoes into wedges. Peel and finely chop the onion and garlic. Finely chop the basil.
Peel and chop the carrot. Dice the red pepper.
Sauté all the vegetables in a pot with oil, without letting them take color. Add curry, bay leaf, and a liter of water, and let it simmer for some time until the water is reduced by half.
Blend the mixture with an immersion blender. Season the soup with salt and pepper to taste and let it simmer further.
Add egg whites and blend them in subsequently.
Tip!
If you want the soup stronger, simply add more curry.
