Chicken muffins

Servings: 12 muffins

Savoury muffins - mmh! These muffins with chicken, broccoli, and carrot are excellent as a snack to curb hunger, but can certainly also be used in lunchboxes or served on a tapas platter.


You need

700 g chicken, minced
4 large carrots
300 g broccoli
115 g DAVA whitePRO egg whites
2 tsp salt
Coconut oil to grease the muffin moulds or use non-stick moulds
1 tbsp psyllium husks
Turkey bacon, optional

How to

Peel and grate the carrots. Cut the broccoli into small pieces. Mix carrots and broccoli together with the chopped chicken and egg whites.
Add salt and psyllium husks. Pour mixture into the greased muffin moulds.
Bake in oven for 25-30 minutes at 180 °C.

Other vegetables can easily be used, as well as garlic, chili, or other spices can be added according to taste. Ideal for freezing, so you always have something healthy for those small hunger cravings!
