No Chicken sweet and sour bowl

Sweet and sour chicken is a very popular Asia-inspired dish, as it has a lovely interaction between the sweet and sour. Obviously, we thought: "Why not try to make the dish with No Chicken?" The result? A lovely bowl with sweet and sour No Chicken that is easy to make as well as tasty.

 
Our version contains noodles, but you can easily use rice for this dish as well, if you prefer. Furthermore, you can add more vegetables as desired.

Ingredients

Sweet and sour bowl
1 bag DAVA No Chicken
2 tbsp coconut oil
2 tbsp ginger, freshly grated
2 cloves garlic, crushed
2 tbsp acacia honey
2 tbsp apple cider vinegar
1 dl water
1 dl sweet chilli sauce
0.5 fresh pineapple, cut into bite-size pieces
8 baby corn, cut into halves
120 g cashew nuts
Salt and pepper, optionally soya
 
Serve with
Sesame seeds, toasted
Fresh coriander
Lime
Noodles or basmati rice

Instructions

Prepare No Chicken according to instructions on the bag.
 
Heat the oil in a pan over medium heat. Sauté ginger and garlic for 2 minutes.
 
Add acacia honey, apple cider vinegar and sweet chilli sauce. Bring everything to a boil with the water.
 
Then, add pineapple, baby corn and cashew nuts, and mix everything gently, after which you add No Chicken. Heat everything while stirring gently. 
 
Season, and add more chilli sauce or acacia honey to taste.
 
Serve the dish in a deep bowl with noodles or basmati rice, and sprinkle with sesame seeds and coriander. Drizzle lime over the dish.
