No Beef veggie meatballs

Are you crazy about falafels and meatballs? Then you will definitely love our veggie meatballs with No Beef plant strips as well. The veggie meatballs can be made with regular eggs or No Egg, depending on whether you want a vegetarian or vegan version. 

The veggie meatballs are perfect as filling in pitta pockets, as an accompaniment to your salad, and as topping on a rye bread open sandwich—or you can simply eat them as a snack on the go.

Ingredients

1 bag No Beef
2 dl water
3 tbsp oil
1 onion
2 dl rolled oats
1 tbsp apple cider vinegar
Salt
Pepper
1 egg
Oil, for frying

Instructions

Prepare No Beef according to instructions on the bag, but do not fry it.
 
Mince the onion, and mix it with No Beef. 
 
Add rolled oats, spices and apple cider vinegar. Mix, and let the mixture rest for 10 minutes. Add an egg, and mix thoroughly. Then, blend briefly with an immersion blender to get an even mixture. Do not blend for too long. There should still be some structure.
 
Shape the mixture to about 15-20 veggie meatballs with a spoon, and fry them in a pan in vegetable oil over medium heat, until they are golden on all sides.
