No Beef Tacos with spicy tomato salsa

We understand why tacos are so popular with young and old, because you can fill them with anything you want. Some like tacos with corn, while others prefer peas. Some want everything. And tacos work for it all ๐ŸŒฎ๐Ÿงก

In addition to vegetables and salsa, tacos are often served with chicken, beef or pork, possibly some black beans or kidney beans as well, but we have chosen to make this taco recipe with our meat substitute No Beef Taco. Our taco filling is accompanied very nicely by hot spices and a spicy tomato salsa. Perhaps you should try this version for your next Taco Tuesday?

Ingredients

No Beef Taco filling
1 bag DAVA No Beef Taco
1 yellow onion, cut into small cubes
2 tbsp olive oil 
1 tsp cumin
2 cloves garlic, crushed
0.5 tsp smoked paprika
2 tbsp tomato concentrate
Fresh coriander, finely chopped
Salt and pepper
 
Spicy tomato salsa
4 tomatoes, cut into small cubes
1 red onion, cut into small cubes
2 spring onions, minced
1 green chilli, minced
140 g corn, frozen
1 lime
2 tbsp olive oil
Salt and pepper
 
Serve with 
8-12 taco shells
Sour cream, regular or vegan
4 lime wedges
Fresh coriander

Instructions

No Beef Taco filling
Prepare No Beef Taco according to instructions on the bag, but do not fry it.
 
Heat up the olive oil in a pan, and sauté the onions for 2 minutes without letting them brown. Then, add No Beef Taco, and sauté with the onions. 
 
Add cumin, garlic, paprika, chopped coriander and tomato concentrate.
 
Stir the mixture well, and add 2 dl of water. Let it simmer for a few minutes over low heat, until it has a suitable consistency for tacos.
 
Prepare the tomato salsa while the filling is simmering. Season with salt and pepper.
 
Spicy tomato salsa
Thaw the frozen corn in a sieve under some hot water. Let the water drip off.
 
Mix all the cut vegetables with oil and lime juice. Season with salt and pepper.
 
Serving
Heat up the taco shells in the oven according to the instructions on the packaging.
 
Serve No Beef Taco filling and the spicy tomato salsa in bowls on the table. Put sour cream, lime and coriander on the table as well, so people can have a good time making their own tacos.
